Prepared by Chef Marco Stabile with sun-ripened Italian tomatoes, delicate leeks, extra virgin olive oil, and a fragrant bouquet of basil and thyme, it is made unique by the unmistakable flavor of pitted Taggiasca Olives.
Cultivated in the Imperia area, Taggiasca Olives are small, pulpy, and full of character. Their slightly bitter note perfectly complements the sweetness of tomato and the aroma of herbs, creating a sauce with a harmonious, Mediterranean, deep profile.
Versatile and rich, it is ideal for seasoning artisanal pastas like Trenette, but also for enriching meat or vegetable main courses, from wild boar stew to artichokes, from rabbit to potatoes.
