OUR PASTA

Our pasta’s selection is based on the unique quality of two ingredients: water and durum wheat, both rigorously Tuscan.
The water used is taken from a private spring that arrives directly from the Pistoiesi mountain chain, where the Abetone Mountain’s winter snow melts and takes its course.
The wheat used here is born from the passion and tradition of the Tuscan Maremma’s farmers. It’s chosen before it is even farmed, defining the land of its cultivation.
So, our pasta is made from pure high-protein wheat, easily traceable from the fields to the consumer’s dinner table.
It’s realized like in days of old: in a workshop, where it’s made in the morning and left to dry for 3 days in wooden cells. No industrial process.

A NATURAL PROCESS

HIGHLY DIGESTIBLE

Corte del Dome’s pasta isn’t just distinguished by the quality of its prime ingredients;
One of the pasta’s most important aspects is its high digestibility. In fact, during production there are no mechanical proceedings present, and the slow drying phase is done naturally in wooden cells, over the course of more than two days.

A carefully selected assortment of pastas to satisfy all tastes and recipes.
From the classics like Spaghetti to short pasta musts, like Penne and Fusilli.
These pastas nicely complement every type of sauce, whether it be of meat or vegetables.
To make sure nothing is left to chance, we have a perfect cut of the Mezze Maniche pasta, perfect for any and all condiments, thanks to their cylindrical shape and external lining. Further attention was also given to regionality with the proposal of Pici pasta, a traditional pasta from the Val d’Orcia area and Siena’s province.
Experiments and research are at the base of Corte del Dome’s philosophy, and it’s with this in mind that we propose the Avvolti, a type of specially made pasta that resembles an openTortiglione. This pasta effortlessly highlights and welcomes every condiment it’s paired with.

To leave nothing to chance, excellent cut Mezze Maniche are ideal for holding any kind of sauce thanks to their cylindrical shape and outer ridging.
More attention was then given to regionality with the proposal of Pici, a traditional pasta typical of the Val d’Orcia area and the province of Siena.
Experimenting and researching is at the core of the philosophy of the Court of the Dome, and with this in mind, Avvolti, a type of specially made pasta similar to an open tortilla, is proposed.
It easily encapsulates any seasoning, enhancing its integration with the pasta.
