Corte del Dome’s Fusilli represent the perfect synthesis of homegrown culinary excellence: a marriage of tradition and innovation with meticulous attention shown for quality and sustainability, Corte del Dome makes this pasta with pure wheat, exclusively cultivated in Tuscany. Every grain tells the tale: a land rich with agricultural traditions, where ancient practices are seamlessly blended with the most modern cultivation techniques, ensuring a product of extraordinary quality.
Each of these Fusilli is made with the ancient technique of bronze drawing, which guarantees the pasta will have the perfect coarseness needed to be complemented by any kind of sauce. The water used comes from a spring that vigorously flows from the arduous passages of the Pistoiesi Mountain chain, where the Abetone Mountain’s winter snow melts and flows down onto the valley. The grain is born out of the passion and tradition of the Maremma region’s farmers, who select the wheat from the very moment they choose the cultivation’s land, long before they see the grain sprout from under the ground.
Corte del Dome’s Fusilli are produced directly by the ancient Tuscan artisans who follow the mantra of “done like the old days”, in workshops where the pasta is produced in the morning and then put to dry in wooden cells over the course of three days, thus maintaining all the healthy qualities of the land’s grain.
Thanks to the collaboration with Michelin star chef Marco Stabile, each type of pasta from Corte del Dome’s selection is paired with an exclusive sauce, reinterpreted with creativity, but always with respect towards tradition.
This way, these Fusilli aren’t just a plate of pasta, but a real sensorial journey. Traditional recipes creatively revisited, to ensure every bite tells a tale and unites past and present as well as tradition and innovation, in a perfect mix of quality and taste.
